
Chicken & egg sandwiches

Bread, wholemeal
Eggs
Chicken breast
Olive oil
Pear
Tomatoes
Lettuce
Method
- Cut the chicken into strips and season with salt and pepper
- Heat the oil in a pan, add the chicken and cook for 5-6 minutes or until white all the way through. Remove from the pan and set aside
- Fry the eggs in the same pan for 3 minutes and season with salt and pepper
- Toast the bread
- Lay the lettuce and tomato on the toast, add the chicken and top with the egg
- Save the pear for dessert
- We serve this as an open sandwich but you can serve it closed, if you want
