Bread, wholemeal
Chicken breast
Olive oil


  • Cut the chicken into strips and season with salt and pepper
  • Heat the oil in a pan, add the chicken and cook for 5-6 minutes or until white all the way through. Remove from the pan and set aside
  • Fry the eggs in the same pan for 3 minutes and season with salt and pepper
  • Toast the bread
  • Lay the lettuce and tomato on the toast, add the chicken and top with the egg
  • Save the pear for dessert
  • We serve this as an open sandwich but you can serve it closed, if you want
